What is White Tea

White tea is the least processed tea from the Camellia Sinensis plant, it is as though you plucked the fresh young bud and leaf, and directly dehydrated after harvesting. It is little processed to prevent any oxidation- it is plucked and then wither dried. It produces a delicate, bright, floral clean tasting tea that has unmatched aroma. It is named white tea; not because the tea liquid it produces is white, but because of the fine silver- white "hairs" that cover the tiny unopened bud.

White tea must be harvested at precisely the right time of year, and a white tea plant can only be harvested for about 5 years, then the whole plant must be cut back so that fresh new tea can grow.

White tea has been appreciated by connoisseurs and tea lovers for many years, though it is just starting to make its way into the hearts of the masses. It is the subtlest of all teas and only utilizes the highest quality young leaf to produce the its delicate flavor. It is similar in its chemical makeup, and health benefits of green tea.

1.5 tsp of loose tea for every 8oz of water. 180F/85C for 3-3.5 minutes.
