Gaba tea was created in 1984 in Japan at the National Tea Research Institute by a team of scientists led by Professor Tsushida. It was then that a unique technology of tea leaf fermentation without oxygen access was developed, thanks to which it retained the maximum amount of gamma-aminobutyric acid and other useful components.

 

This new fermentation process completely cuts off the oxygen supply to the raw material so that the glutamic acid in the tea leaves is completely transformed into gamma-aminobutyric acid while maintaining the original level of caffeine and catechins.

 

Gaba tea quickly gained popularity in Japan, and gradually its production was opened up in Taiwan as well. By the end of 1999, gamma-aminobutyric acid was also being produced in Thailand, China and Vietnam, where its technology had been perfected.

Gaba tea uses tea leaves from the bushes growing in an ecologically clean region - the mountain plantations of Alishan province. Thanks to the sunny weather that alternates with frequent fog, the tea leaves accumulate the maximum amount of beneficial vitamins, micro- and macro-elements, and amino acids.

Peculiarities of Gaba tea harvesting and production:

  1. 8-10 days before harvesting the tea leaves are shaded, sheltering them from direct sunlight and wind.
  2. In mid-April the manual collection of raw materials begins, which lasts until mid-December (April and May leaves have the greatest health benefits).
  3. After hand picking, the top tea leaves are evenly spread out in a dry, warm and well-ventilated place to dry.
  4. After drying, the process of fermentation of raw materials begins - the prepared raw material is poured into special metal containers, from which oxygen is pumped out beforehand. The lack of oxygen activates the conversion of glutamic acid into gamma-aminobutyric acid, the other components that make up the tea leaves remain unchanged.
  5. The enzymatic stage lasts at least 24 hours, after which the processed leaves are rolled up and packed for further sale.

 

Important: In the process of twisting Gaba leaves can be mixed with various fruit, herbal or floral additives that make their flavor and aroma more intense and interesting.
