Japanese oolong tea is semi-oxidized, making it a variety completely unique in flavor and appearance from Japanese green teas

Iri-Koucha is a semi-fermented Japanese “oolong black” tea, the leaves are withered in the sun and indoors to reduce the moisture content. When the oxidation level is about 30%, the leaves are then heated in an iron pan to prevent any further oxidation; this process prevents the leaves from turning completely black and gives the tea its rich aroma and flavor and unique characteristics.

The leaf has a dark, curly appearance with flecks of lighter colored brown and green leaves. Once steeped, the liquor is a warm amber-brown, and the taste is mildly bitter, with a refreshing orchid-like floral aftertaste.

Preparation:
Use 1-1.5 tsp of tea per 8oz/200ml of water. Heat water to 195F/90C and steep for 2-3 minutes.

To the nose, this tea is lightly scented, and that scent seams to evaporate very quickly. The leaves are of a dark green color, slightly oxidized. I first tried to infuse 2-3 minutes in a cast iron teapot. I found a slightly floral tea, without astringency, but without much taste either.

I wasn’t too sure, so I made another batch. I rinsed the leaves then steeped 6-7 minutes. It had more taste, but was also a bit bitter. Obviously not the way to go with this one. So, I preceded again, with more leaves this time, about 3 tbsp. I rinsed the leaves in the cast iron teapot, discarded, and steeped 2 minutes. Much better. Gatcha!

Then I did some research, and realized that I should have started there! A true traditional kama-iri cha has olive green leaves, without luster. Checked. Its liquor is a golden yellow, completely translucent. Checked (although I would say light golden greenish yellow). It is a light flavor very refreshing tea. Checked. It should have a sweet scent. Not sure about that. This one has a very floral aroma, close to jasmine teas (the description says honeysuckle; fine). With Kama-iri cha, the oxidation of the leaves is stopped by heating the leaves on a hot surface (pan) while all other types of Japanese green teas are steamed. Checked.

Overall, I am glad I bought this tea and I feel very lucky to be able to try different types of tea and develop my palate, but next time I will do my research before tasting, so I will know what to expect!

With all that knowledge, I did a second infusion. It was superb: very floral and a bit roasted. It seems a tiny bit smoother than the first infusion, and the color is richer (dark yellow). And I made a 3rd and 4th, infusion. It was similar to the 2nd infusion, only the color of the liquor faded gradually and went back to its original color (light golden greenish yellow).
