Description

This is an Aged White Peony tea; like fine wine, certain high quality white teas can be naturally aged and enhance their flavor when stored in the right way. This particular crop is from the May 1998 harvest and has been stored now for more than 15 years.

The greatest difference between this aged variety and a traditional White Peony is that the leaves have continued to oxidize as it was aging. This higher level of oxidization changes the properties of the tea, the aged leaves are quite dark, now shades of deep browns and dark greens. Instantly recognizable as Bai Mu Dan, Pai Mu Tan, or what we call White Peony in the west. The tea’s flavor has deepened over the years and the velvety sweetness of a high grade white tea remains; though, arguably, fuller sweeter, and rounder. The result is a delicious, full, smooth and refreshing tea that any tea lover is sure to enjoy!

Preparation:
Use 1-1.5 tsp of tea per 8oz/200ml of water. Heat water to 190F/85C and steep for 3-4 minutes.

Although darker in color than most whites, I found the flavor to be somewhat subtle, a bit "nutty" with floral notes. Good mouth feel/body.
