Bergamot, a citrus fruit grown mainly in southern Italy. Its oil gives Earl Grey its bright, floral, citrusy aroma.
Use 1 teaspoon per 8 oz cup and water just off the boil, around 200 to 212°F. Steep for 3 to 4 minutes; longer steeps can make the tea taste bitter and mute the bergamot.
Cream Earl Grey adds vanilla to the bergamot, which gives a softer, rounder, almost dessert-like flavor. It is also the base for a popular London Fog latte.
Brew Earl Grey or Cream Earl Grey double strength, add a little vanilla syrup or honey, and top with steamed, frothed milk.
